These passion fruit cookies consist of two slightly
chewy, tangy biscuits sandwiched together with a soft passion fruit
butter cream.
Both biscuit and cream have a soft crunch provided by
the passion fruit seeds offering a lovely combination of textures and
flavours.
They are quite involved to make so you will need to set
aside some time to make them, but they are well worth it.
