This moist and tasty loaf is quite an easy one to make.
The coconut offers great flavour but makes the spongy cake mixture
slightly more dense than other cakes, while the glace cherries make a
lovely sweet addition to each bite.
As it is quite moist it will keep well for a couple of
days in an airtight container.
